Ingredients:
- 1 large mango, peeled and sliced
- Juice of 3 limes
- 80ml fish sauce
- 80g sugar
- 2 garlic cloves, chopped
- 1-2 red chili peppers, finely chopped
- 450g cherry tomatoes, halved
- 1 red onion, thinly sliced
- Fresh basil, chopped (keep some for garnish)
- 2 spring onions, chopped
- 1 burrata cheese
- Olive oil, for grilling
Instructions:
Grill the Mango:
- Heat a pan to medium heat and add a little olive oil.
- Grill the mango slices for about 2 minutes on each side until there are grill marks.
- Transfer to a bowl and drizzle with some of the lime juice.
Prepare the Dressing:
- In a bowl, mix the remaining lime juice, fish sauce, sugar, chopped garlic, and chopped chili peppers until the sugar is dissolved.
Combine the Salad:
- Add the halved cherry tomatoes, sliced red onion, and chopped basil to the dressing. Mix well to combine.
- Reserve some of the dressing for later.
Assemble the Salad:
- On a serving plate, spread the tomato mixture.
- Add the grilled mango slices on top.
- Place the burrata cheese in the center of the salad.
- Drizzle with the reserved dressing.
Garnish and Serve:
- Garnish with chopped spring onions and the remaining fresh basil.
- Serve immediately and enjoy the refreshing and flavorful salad!
