Grilled Mango and Burrata Salad

Ingredients:

  1. 1 large mango, peeled and sliced
  2. Juice of 3 limes
  3. 80ml fish sauce
  4. 80g sugar
  5. 2 garlic cloves, chopped
  6. 1-2 red chili peppers, finely chopped
  7. 450g cherry tomatoes, halved
  8. 1 red onion, thinly sliced
  9. Fresh basil, chopped (keep some for garnish)
  10. 2 spring onions, chopped
  11. 1 burrata cheese
  12. Olive oil, for grilling

Instructions:

Grill the Mango:

  • Heat a pan to medium heat and add a little olive oil.
  • Grill the mango slices for about 2 minutes on each side until there are grill marks.
  • Transfer to a bowl and drizzle with some of the lime juice.

Prepare the Dressing:

  • In a bowl, mix the remaining lime juice, fish sauce, sugar, chopped garlic, and chopped chili peppers until the sugar is dissolved.

Combine the Salad:

  • Add the halved cherry tomatoes, sliced red onion, and chopped basil to the dressing. Mix well to combine.
  • Reserve some of the dressing for later.

Assemble the Salad:

  • On a serving plate, spread the tomato mixture.
  • Add the grilled mango slices on top.
  • Place the burrata cheese in the center of the salad.
  • Drizzle with the reserved dressing.

Garnish and Serve:

  • Garnish with chopped spring onions and the remaining fresh basil.
  • Serve immediately and enjoy the refreshing and flavorful salad!
