Mango Sticky Rice

Ingredients:

  • 1 cup glutinous rice (sticky rice)
  • 1 1/2 cups water
  • 1 1/2 cups coconut milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 2 ripe mangoes, peeled and sliced
  • 1 tablespoon toasted sesame seeds (optional, for garnish)
  • 1 teaspoon cornstarch

Instructions:

Prepare the Sticky Rice:

  • Rinse the glutinous rice several times until the water runs clear.
  • In a pot, combine the rinsed rice and 1 1/2 cups of water. Let it soak for at least 30 minutes.
  • After soaking, bring the pot to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes until the water is absorbed and the rice is cooked. Remove from heat and let it sit, covered, for another 10 minutes.

Make the Coconut Sauce:

  • While the rice is cooking, in a separate saucepan, combine 1 cup of coconut milk, 1/4 cup of sugar, and 1/8 teaspoon of salt. Heat the mixture over medium heat, stirring until the sugar dissolves. Do not let it boil. Remove from heat and set aside.

Sweeten the Rice:

  • Once the rice is done, transfer it to a large bowl. Gradually pour the coconut sauce over the rice while gently stirring to combine. Cover the bowl and let it sit for at least 20 minutes to allow the rice to absorb the coconut sauce.

Prepare the Topping Sauce:

  • In the same saucepan, combine the remaining 1/2 cup of coconut milk, 1/4 cup of sugar, and 1/8 teaspoon of salt. Heat over medium heat, stirring until the sugar dissolves. Mix the cornstarch with a little water and add to the saucepan to thicken the sauce. Remove from heat and set aside.

Assemble the Dessert:

  • Serve the sweetened sticky rice with slices of ripe mango on the side.
  • Drizzle the remaining coconut sauce over the rice.
  • Garnish with toasted sesame seeds if desired.
