Ingredients:

  1. 4 medium ripe mangoes
  2. 5 cups sugar
  3. 1/2 cup lemon juice

Instructions:

Prepare the Mangoes:

  • Peel the mangoes and remove the flesh from the pits. Chop the mango flesh into small pieces.

Cooking the Jam:

  • In a large pot, combine the chopped mangoes, sugar, and lemon juice.
  • Stir well to combine all ingredients.

Cooking Process:

  • Bring the mixture to a boil over medium-high heat, stirring constantly to dissolve the sugar.

Simmering:

  • Once boiling, reduce the heat to medium-low and let the mixture simmer for about 15-20 minutes, stirring occasionally. The jam should thicken and reduce slightly. Adjust the cooking time as needed depending on the desired thickness of the jam.

Testing for Doneness:

  • To test if the jam is ready, place a small amount on a chilled plate. If it sets and wrinkles when you push it with your finger, it’s done. If not, continue cooking and testing every few minutes.

Jar and Storage:

  • Once the jam reaches the desired consistency, remove it from heat.
  • Transfer the hot jam carefully into clean, sterilized jars.

Cooling and Storing:

  • Let the jars cool to room temperature before sealing with lids.
  • Store the mango jam in the refrigerator for up to several weeks.
