Tropical Oatmeal With Coconut and Mango

Ingredients:

  • 1 cup rolled oats
  • 2 cups coconut milk
  • 1 ripe mango, peeled and diced
  • 1/4 cup shredded coconut
  • 2 tablespoons honey or to taste
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: chopped nuts, a sprinkle of cinnamon, extra mango slices

Instructions:

  • Cook the Oatmeal: In a saucepan, add coconut milk to a boil. Add rolled oats and salt (just a pinch), then decrease the stove heat. Simmer for 11-15 minutes, stirring occasionally, until soft and thickened.

  • Add Mango and Coconut: A few minutes before the oatmeal is done, stir in the diced mango and shredded coconut. Continue cooking until the mango is warm and the oatmeal is creamy.

  • Sweeten and Flavor: Remove the oatmeal from heat. Stir in the honey and vanilla extract. Adjust the sweetness according to your taste.

  • Serve: Spoon the oatmeal into bowls and add any optional toppings like chopped nuts, extra mango slices, or a sprinkle of cinnamon.
