Ingredients:
- 8 rice paper wrappers
- 1 ripe mango, julienned
- 1 avocado, sliced
- 1 carrot, julienned
- 1 cucumber, julienned
- 1/4 cup fresh mint leaves
- 1/4 cup fresh basil leaves
- 1/4 cup fresh cilantro leaves
- Hoisin sauce for dipping
Instructions:
- Prepare Ingredients: Prepare all the vegetables and fruits by cutting them into thin strips or julienne for easy wrapping.
- Soften Rice Paper: Dip every rice paper wrapper into warm water for just a few seconds until it’s just pliable but not overly soft.
- Assemble Spring Rolls: Lay out one softened rice wrapper at a time on a clean, slightly damp cloth. Place some mango, avocado, carrot, cucumber pieces, and herbs towards the bottom of the rice paper.
- Roll Tightly: Fold the rice paper bottom to cover the filling, then fold the sides and roll tightly.
- Serve with Sauce: Serve the spring rolls immediately with hoisin sauce for dipping.
