Ingrediant:
- 8 lamb chops
- 2 tablespoons olive oil
- Salt and freshly ground black pepper
For the Mango Mint Chutney:
- 1 ripe mango, peeled and chopped
- 1/4 cup fresh mint leaves
- 1 tablespoon sugar
- 2 tablespoons white vinegar
- 1 small red onion, chopped
- 1 jalapeño, seeded and chopped
Instructions:
- Marinate Lamb Chops: Powder the lamb chops with salt and crushed pepper and drizzle with olive oil. Let them marinate while you prepare the chutney.
- Prepare Mango Mint Chutney: In a food blender, add all chutney ingredients and pulse until you achieve a coarse texture. Adjust seasoning as needed.
- Grill Lamb Chops: Preheat the grill to moderately high heat. Grill the lamb chops for 3-4 minutes for one side for medium-rare or longer, depending on your preference.
- Serve: Serve the grilled lamb chops with a generous spoonful of mango mint chutney on the side.
