Lamb Chops with Mango Mint Chutney

Ingrediant:

  • 8 lamb chops
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper

For the Mango Mint Chutney:

  • 1 ripe mango, peeled and chopped
  • 1/4 cup fresh mint leaves
  • 1 tablespoon sugar
  • 2 tablespoons white vinegar
  • 1 small red onion, chopped
  • 1 jalapeño, seeded and chopped

Instructions:

  • Marinate Lamb Chops: Powder the lamb chops with salt and crushed pepper and drizzle with olive oil. Let them marinate while you prepare the chutney.

  • Prepare Mango Mint Chutney: In a food blender, add all chutney ingredients and pulse until you achieve a coarse texture. Adjust seasoning as needed.

  • Grill Lamb Chops: Preheat the grill to moderately high heat. Grill the lamb chops for 3-4 minutes for one side for medium-rare or longer, depending on your preference.

  • Serve: Serve the grilled lamb chops with a generous spoonful of mango mint chutney on the side.
