Ingrediants:
- 4 pork chops, about 1-inch thick
- Salt and pepper to taste
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
For the Mango Salsa:
- 1 ripe mango, peeled and diced
- 1/2 red bell pepper, finely diced
- 1/4 cup red onion, finely chopped
- 1 small jalapeño, seeded and finely chopped
- Juice of 1 lime
- Salt and pepper to taste
- Fresh cilantro, chopped for garnish
Instructions:
- Prepare Pork Chops: Powder the pork chops with salt and crushed pepper. In a bowl, mix honey and soy sauce.
- Cook Pork Chops: Heat one tbsp oil in a skillet over moderate heat. Add chops and cook for 4-5 minutes for one side. In the last few minutes of cooking, brush the honey-soy glaze over the chops to create a caramelized finish.
- Make Mango Salsa: While cooking, toss all the ingredients for the salsa. Powder it with salt and crushed pepper to taste.
- Serve: Put one pork chop on a plate and top with a generous amount of mango salsa. Garnish with fresh cilantro.
