Caribbean Mango Slaw

Ingredients:

  • 1 large ripe mango, julienned
  • 2 cups shredded cabbage
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1/4 cup fresh cilantro, chopped
  • 2 green onions, thinly sliced
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Optional: 1/4 teaspoon chili flakes for heat

Instructions:

  • Combine Vegetables and Mango: In a bowl, toss the mango, cabbage, red bell pepper, carrot, cilantro, and green onions.

  • Prepare the Dressing: In a bowl, toss the lime juice, olive oil, honey, salt, crushed pepper, and chili flakes if using.

  • Toss and Chill: Drizzle dressing over the slaw mixture and toss well. Refrigerate for thirty minutes before serving to allow the flavors to meld.

  • Serve: Serve the slaw chilled, perfect as a side to grilled meats or as part of a Caribbean-themed meal.
