Spicy Mango Bean Salad

Ingredients:

  • 1 ripe mango, diced
  • 1 can black beans, rinsed and drained
  • 1 can kidney beans, rinsed and drained
  • 1 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and finely chopped
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions:

  • Prepare the Salad: In a deep-bottom bowl, toss the diced mango with black beans, kidney beans, red onion, cilantro, and jalapeño.

  • Make the Dressing: In a bowl, toss the lime juice, olive oil, cumin, salt, and crushed pepper.

  • Combine and Serve: Drizzle dressing over the salad and toss to coat evenly. Adjust seasoning if necessary. Serve immediately, or chill for one hour to enhance the flavor.
