Ingredients:
- 1 ripe mango, diced
- 1 can black beans, rinsed and drained
- 1 can kidney beans, rinsed and drained
- 1 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and finely chopped
- Juice of 1 lime
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions:
- Prepare the Salad: In a deep-bottom bowl, toss the diced mango with black beans, kidney beans, red onion, cilantro, and jalapeño.
- Make the Dressing: In a bowl, toss the lime juice, olive oil, cumin, salt, and crushed pepper.
- Combine and Serve: Drizzle dressing over the salad and toss to coat evenly. Adjust seasoning if necessary. Serve immediately, or chill for one hour to enhance the flavor.
