Mango Chia Seed Pudding

Ingredients:

  • 1/4 cup chia seeds
  • 1 cup coconut milk
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons honey or maple syrup
  • 1 cup ripe mango, pureed
  • Additional diced mango for topping

Instrictions:

  • Mix Chia Pudding: In a deep-bottom bowl, combine chia seeds, coconut milk, vanilla extract, and honey or maple syrup. Stir well until everything is thoroughly mixed.

  • Chill: Cover the bowl and refrigerate for 4 hours (at least or more), preferably overnight, until the pudding has thickened.

  • Layer with Mango Puree: Spoon half of the chia pudding into two serving glasses. Add a layer of mango puree over the pudding.

  • Top and Serve: Add the leftover chia pudding, then top with additional diced mango. Serve chilled.
