Mango and Black Bean Tacos

Ingredients:

  • 8 small corn tortillas
  • 1 cup ripe mango, diced
  • 1 can (15 oz weight) black beans, rinsed and drained
  • 1 small red onion, finely chopped
  • 1 jalapeño, seeded and finely chopped
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • Optional toppings: avocado slices, sour cream, or salsa verde

Instructions:

  • Prepare Mango Salsa: In a deep-bottom bowl, combine diced mango, chopped onion, jalapeño, lime juice, and cilantro. Powder it with salt and crushed pepper and mix well.

  • Warm Tortillas: Heat the tortillas over medium heat until warm and slightly charred.

  • Assemble Tacos: Spoon black beans onto each tortilla. Top with mango salsa. Add optional toppings like avocado slices or a dollop of sour cream.

  • Serve: Serve immediately, accompanied by lime wedges and extra cilantro if desired.
