Ingredients:
- 4 large flour tortillas
- 1 cup ripe mango, diced
- 2 cups fresh spinach, roughly chopped
- 1 cup shredded Monterey Jack cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- Cook Spinach: In a skillet, heat one tbsp oil over medium heat. Add spinach and cook to wilted, for 2-3 minutes. Powder it with salt and crushed pepper.
- Assemble Quesadillas: Lay out tortillas on a flat surface. On one half of each tortilla, distribute the cooked spinach, diced mango, and shredded cheese.
- Cook Quesadillas: Fold the tortillas over to cover the fillings. Heat the leftover olive oil in a skillet over medium heat. Cook every quesadilla until golden brown on both sides for 3-4 minutes per side.
- Serve: Cut into wedges and serve hot.
