Mango and Spinach Quesadillas

Ingredients:

  • 4 large flour tortillas
  • 1 cup ripe mango, diced
  • 2 cups fresh spinach, roughly chopped
  • 1 cup shredded Monterey Jack cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  • Cook Spinach: In a skillet, heat one tbsp oil over medium heat. Add spinach and cook to wilted, for 2-3 minutes. Powder it with salt and crushed pepper.

  • Assemble Quesadillas: Lay out tortillas on a flat surface. On one half of each tortilla, distribute the cooked spinach, diced mango, and shredded cheese.

  • Cook Quesadillas: Fold the tortillas over to cover the fillings. Heat the leftover olive oil in a skillet over medium heat. Cook every quesadilla until golden brown on both sides for 3-4 minutes per side.

  • Serve: Cut into wedges and serve hot.
