Ingredients:
- 4 large flour tortillas
- 1 ripe mango, diced
- 1 ripe avocado, diced
- 1 cup shredded cheddar cheese
- 2 tablespoons olive oil
Instructions:
- Assemble Quesadillas: Spread diced mango and avocado on one-half of each tortilla. Sprinkle with shredded cheese.
- Cook Quesadillas: Fold the tortillas over the fillings. Heat one tbsp of oil in a skillet over medium heat. Place the quesadillas and cook until golden brown on both sides for 3-4 minutes per side.
- Serve: Cut the quesadillas and serve immediately.
