Mango Avocado Quesadillas

Ingredients:

  • 4 large flour tortillas
  • 1 ripe mango, diced
  • 1 ripe avocado, diced
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil

Instructions:

  • Assemble Quesadillas: Spread diced mango and avocado on one-half of each tortilla. Sprinkle with shredded cheese.

  • Cook Quesadillas: Fold the tortillas over the fillings. Heat one tbsp of oil in a skillet over medium heat. Place the quesadillas and cook until golden brown on both sides for 3-4 minutes per side.

  • Serve: Cut the quesadillas and serve immediately.
