Grilled Mango and Halloumi Skewers

Ingredients:

  • 2 ripe mangoes, peeled and chunked
  • 250 grams halloumi cheese, cut into cubes
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • Olive oil for brushing
  • Fresh mint or cilantro for garnish

Instructions:

  • Preheat Grill: Preheat your grill to moderately high heat.

  • Assemble Skewers: Thread mango chunks, halloumi cubes, and bell pepper chunks alternately onto skewers.

  • Grill: Brush the skewers lightly with olive oil. Grill for about 5 minutes on each side or until the cheese is golden and the vegetables are slightly charred.

  • Garnish and Serve: Garnish with fresh mint or cilantro before serving.
