Mango and Sweet Potato Hash

Ingredients:

  • 2 large sweet potatoes, peeled and diced
  • 1 ripe mango, peeled and diced
  • 1 red bell pepper, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 teaspoon smoked paprika
  • Fresh cilantro, chopped for garnish
  • Optional: fried or poached eggs for serving

Instructions:

  • Cook Sweet Potatoes: In a skillet, heat two tablespoons of oil over medium heat. Add sweet potatoes and saute for 7-10 minutes until they start to soften.

  • Add Vegetables: Add the diced onion, red bell pepper, and garlic to the skillet. Cook for 5-7 minutes more until the vegetables are tender.

  • Mix in Mango: Toss in the diced mango and smoked paprika. Cook for another 3-5 minutes until the mango is heated through.

  • Season: Powder it with salt and crushed pepper to taste.

  • Garnish and Serve: Sprinkle chopped cilantro over the top. Serve hot, optionally topped with a fried or poached egg.
