Ingredients:
- 2 large sweet potatoes, peeled and diced
- 1 ripe mango, peeled and diced
- 1 red bell pepper, diced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 teaspoon smoked paprika
- Fresh cilantro, chopped for garnish
- Optional: fried or poached eggs for serving
Instructions:
- Cook Sweet Potatoes: In a skillet, heat two tablespoons of oil over medium heat. Add sweet potatoes and saute for 7-10 minutes until they start to soften.
- Add Vegetables: Add the diced onion, red bell pepper, and garlic to the skillet. Cook for 5-7 minutes more until the vegetables are tender.
- Mix in Mango: Toss in the diced mango and smoked paprika. Cook for another 3-5 minutes until the mango is heated through.
- Season: Powder it with salt and crushed pepper to taste.
- Garnish and Serve: Sprinkle chopped cilantro over the top. Serve hot, optionally topped with a fried or poached egg.
